I was looking at this, and I realized I don't have any idea of where the mathematics involved comes from. Can someone recommend a reference on the subject?

I recommend "Digital Modeling of Material Appearance" by Dorsey, Rushmeier and Sillion (ISBN 978-0-12-221181-2). Section 5.7 has a nice explanation of scattering in volumes that covers the basic principles.
